Alpen Jogo mix 50% – Mixture rich in varied ingredients containing among others especially prepared spelt flakes, oily grains, yoghurt and natural wheat pre-dough, what jointly gives extraordinary taste note and extended freshness to all types of batches produced on the basis of this mixture.

Basic recipe
Alpen Jogo mix 50% 5,00 kg
Wheat flour type 550 5,00 kg
Yeast 0,40 kg
Water 5,3-5,5 kg
Together 15,7-15,9 kg

Preparation:

  • Combine together all ingredients
  • Time of mixing about 3 minutes slow turns and about 6 minutes quick turns.
  • Temperature of dough: 26-28 °C
  • Time of rest: 10 min.
  • Next divide the dough into parts weighing 2.50 kg (30 pieces)
  • Round off, lengthen slightly and form any shapes. Put away for proofing.
  • It is also possible to roll out part on thickness of 25 mm and cut out any shapes, for example using marker and also put away for proofing.
  • Final fermentation: 30 minutes
  • Bake at temperature 220 °C for about 18-25 minutes with steaming stove.
