Baked goods “Bear Garlic” mix 25% – is mixture with high content of wild garlic in form of green leaves, which gives specific flavour and smell of baked goods and its individual character. Bear Garlic in other words called Wild Garlic is valued culinarily all over the world and lately also it gains popularity in bakery industry. It is valued on the grounds of its health advantages, among others it improves circulation(of blood), reduces cholesterol and blood pressure, it is excellent detoxifier of organism used for regeneration of bacterial flora of intestines, especially after antibiotic treatment. From mixture “Bear Garlic” it is possible to bake varied assortment of small baked goods like buns, baguettes, finger rolls, pizza rolls and breads after addition of leaven and rye flour. This product is excellent proposal of grill baked goods as well.

Preparation:

  • Combine ingredients together, time of blending: about 3 minutes of slow turns and about 6-8 minutes of fast turns.
  • Temperature of dough: 26 ° C
  • Time of rest: 15 minutes.
  • Next divide dough into parts  weighing about 2.50 kg (30 pieces). Round off, lengthen slightly and form elongated rolls. Put away for proofing.
  • Final fermentation: 30 – 40 minutes.
  • Bake at temperature of 220 – 230 ° C for about 18-25 minutes with steaming
  • For second version of recipe in order to increase expansion, baking additive, for example Broad Peak E-free should be added.
