Ice Cream Barbados  is concentrate of powdered ice cream for direct production without having to pasteurize and to add eggs.  Ice Cream Barbados is economical version of Ice Cream Softogelatino with participation of plant fats. Intended for production of soft ice cream from ice cream machine, so-called Italian “soft”. Prepared  ice cream are characterized by it, that they are aerated, soft, with cream consistence.

Advantages of mixture:

  • It blends very easily with water (it is enough to mix manually using confectionery cane) and obtained mass is homogeneous and it is not necessary to strain it through sieve.
  • Obtained ice mass is stable and does not delaminate
  • Available tastes: vanilla, chocolate.

Basic recipe
Barbados 1,00 kg
Cold boiled water or milk 2,50 kg

Preparation:

  • Pour ice cream BARBADOS into water and stir using confectionery cane – until obtaining homogeneous suspension. Put away obtained mixture for 15 – 20 minutes in order to thicken . So prepared mass is ready to be loaded to containers to freezing machine. Each time before pouring into container of freezing machine, suspension should be exactly stirred. Keep stock of ice mixture in refrigerated cabinet at temperature from 0 °C to + 5 ° C, no longer than for 24 hours.
  • ATTENTION! Only boiled / spring water or UHT milk should be applied to prepare ice cream.
