Light Biscuit – is prepared concentrate of biscuit cake allowing to prepare excellent product in very short time. Quality of flavour and structure of prepared biscuit cake is very good. During baking cake takes golden-yellow colour(top of cake is light brown). Application: bottoms of layer cakes,  biscuit cakes rolls, biscuits cakes “Stephens”.

Basic recipe Biscuit Rant Biscuit roulade (60×40 cm)
Light Biscuit 1,00 kg 0,30 kg
Eggs 0,60 kg 0,30 kg
Water 0,10 kg
Together 1,70 kg 0,60 kg

Basic Recipe:

  • Aerate all ingredients for 8-10 minutes on quick turns using cane
  • Dose mass to edges /baking moulds or on baking trays lined with paper for baking
  • Bake edges at temperature about 180 °C for 40-50 minutes (time is depending on weighted portion of dough).
  • Bake rolls at temperature 230-250°C for 5-4 minutes (with slight fusion steaming stove).
