Paste – Panther crust – product in form of powder for making decorations on surface of baked goods. Mixture for production of paste used for spreading loaves of bread before baking wit the result that we obtain attractive gustatorily and visually crust on surface of baked loaf.

Basic recipe
Paste – Panther crust 1,000 kg
Water (temp. 40°C) 0,880 kg
Yeast 0,050 kg

Preparation:

  • Weigh out, combine and mix all ingredients until obtaining homogenous consistence.
  • Put away for about 30 minutes at temperature of 25-30 ° C.
  • Pull out proofed baked goods from expansion chamber in about ¾ volume and spread evenly its surface with PASTE PANTHER CRUST.
  • Put away spread baked goods to expansion chamber and conduct process to full expansion of baked goods.
  • Bake with steaming
  • Another version is to spread baked goods with PASTE PANTHER CRUST directly before putting in to expansion chamber and to proceed further according to technology established in bakery.
  • Prepared paste is fitted only for single and immediate use
