Pizza mix 25% is bakery premix of aroma dough with addition of seasonings and herbs for production pizza cakes and other small baking goods like spice rolls, buns. Dough from this concentrate is easy to prepare, has good stability and taste with fine crumb.

Basic recipe:
Mix pizza 25% 1000 g
Wheat flour type 500 3000 g
Yeast 160 g
Vegetable Oil 200 g
Water 2200 g

Preparation:

  • All components combine together in spiral mixer.
  • Mixing time: 3 min. at low speed and 6 min. at high speed.
  • Next part the dough of mass about 2,20 kg / 30 pcs
  • Obtained parties roll and spread on it the „Tratoria” sauce, next put the additives at your sole discretion, then sprinkle it with yellow cheese and bake
  • Bake at temp. 230-220ºC for about 8-10 minutes with steaming up.
  • Single bottoms of pizza could be frozen after baking at temp. of about 180 ºC.
