“Sloneczny” Sunflower Bread mix 50% – 50%-mixture for production of wheat-rye sunflower baked goods, bread is well-risen and spongy, it preserves long its taste values. It is mixture for production of baked good with remarkable taste and nutritional values. The main ingredient of this mixture is seed of sunflower, which is rich in vitamin E – elixir of youth and vitality. For enrichment of flavour of bread, oatmeal, wheat flakes, rye flakes and barley flakes containing fiber, which regulates metabolism and linseed, sesame were added to mixture. Thanks to special enriching additives baked goods is beautifully well-risen and spongy, and in addition it preserves longer taste values. Mixture is extraordinarily simple in use and does not require additional investments.

Basic recipe:
“Sloneczny” Sunflower Bread 10,00 kg
Water for soaking mixture 10,00 kg
Wheat flour type 650 6,00 kg
Rye flour type 720 4,00 kg
Water 2,00 kg
Yeast 0,80 kg
Together 32,8 kg

Preparation:

  • Soak 10 kg of “SUNNY’ in 10 liters of water at temperature about 26 °C and put away for about 60 minutes. After soaking add 6 kg of wheat flour type 650, 4 kg of rye flour type 720, about 2 litres of water and 0.80 kg of yeast.
  • Duration of mixing: 6-12 minutes depending on type of mixer.
  • Temperature of dough: 26-28 ° C
  • Initial expansion: 10-15 min.
  • Divide dough into bites, round off, lengthen slightly, coat with seeds of sunflower and place in molds greased wit oil.
  • Final fermentation: about 40 min.
  • Temperature of stove 230-240 ° C
  • Time of baking: 30-40 min.
