“Swiatowid” mix 20% – 20%-mixture for baking with content of yoghurt. Prepared batches are characterized by crunchy, thicker crust, that prevents premature drying up of crumb. Yoghurt contained in it causes, that prepared bread has specific, delicate taste.

Basic recipe:
“Swiatowid” mix 20% 1,00 kg
Rye flour type 720 0,625 kg
Wheat flour type 500 or 550 3,37 kg
Yeast 0,067 kg
Water (cold) 3,70 kg
Together 8,762 kg

Preparation:

  • Make dough from all mentioned above ingredients.
  • Duration of mixing: 3 minutes slow turns, 10-12 minutes quick turns.
  • Put prepared dough into bowl greased with oil.
  • Time of rest: 90 minutes in order to ferment.
  • Take out dough on the table, divide into bites weighing 460g or 560g.
  • Round off bites and put away until loosing for 10-15 minutes.
  • Next lengthen bites and put away again for rest.
  • Time of rest: 20 minutes
  • Form loaves in the shape of bundle or lengthen and twine (elongated loaves).
  • Put into baskets in appropriate shape.
  • Baking: after proofing bake at temperature of 200-210 ° C for 55-60 minutes.
