Rustic roll 50% mix – it is easy-to-use mixture intended for baking light, tasty, appetizing and aromatic rolls with high content of grains and cereal flakes and other ingredients such as rye malt. Such composition guarantees, that rolls not only look good and taste good, but also they are valuable nutritionally.

Basic recipe
Rustic roll 50% mix 3,00 kg
Water for soaking 2,5 kg
Wheat flour type 750 3,00 kg
Yeast 0,24 kg
Water refill 0,80 kg
Together 9,54 kg

Preparation:

  • Mixture should be soaked in given amount of warm water for one hour. Next add remaining ingredients and mix. Then put away for rest.
  • Time of mixing- 6 minutes slowly and 6 minutes quick turns
  • Time of rest- 15 minutes.
  • Temperature of dough 26 ° C
  • After time of rest weigh up dough into parts and put away until loosing for 10 minutes. Next cut off rolls on divider, dampen with water, coat with decorative sprinkles, for example sunny Kwali garni, lay on baking trays and put away for proofing.
  • Suggested weighted portion for grainy rolls is 2,100 kg / 30 pieces.
  • It is possible to shape bites of dough ovally and decorate or shape in form of finger and then sprinkle coarse salt and caraway over them.
  • Time of proofing in fermentation chamber: 35-45 minutes. Put into stove after reaching full proofing.
  • Time of baking is 18 – 25minutes at temperature 230 °C falling to 210 °C – initially in atmosphere of technological steam. After about 7 min. steam should be drained from baking chamber.
