Mixture “Starożytny” spelt bread is comfortable and easy-to-use. It contains grain of spelt, which is rich in nutrients and if it is consumed in baked goods, it preserves its natural attributes. It is intended for production of baked goods with damp and appetizing crumb and exceptional taste and health values.

Basic recipe I II
“Ancient” Spelt bread 1,00 kg 1,00 kg
Rye flour type 720 8,50 kg 1,50 kg
Wheat flour type 850 1,50 kg 8,50 kg
Yeast 0,36 kg 0,36 kg
Rye dried leaven 0,40 kg 0,40 kg
Salt 0,06 kg 0,06 kg
Water 7,80 kg 7,60 kg

Preparation:

  • Knead dough from all ingredients and put away for rest.
  • Time of mixing: 8 minutes slow turns and 2 minutes quick turns.
  • Temperature of dough: 28-30ºC
  • Initial expansion: 10-15 minutes.
  • After time of rest weigh up dough into bites and put into moulds
  • Final fermentation about 40-50 minutes. Put into stove after reaching full proofing. Before baking sprinkle rye flour over bites of dough.
  • Baking at temperature 240ºC falling to 220ºC for about 50 minutes.
  • Time of baking: about 50 min, initially in atmosphere of technological steam.
  • After about 7 minutes draughts should be opened.
